Vegetable Handi

Mixed vegetables cooked in a spiced, rich tomato-onion gravy. Creamy, flavorful, and vegetarian-friendly.

Instructions

    Heat oil in a pan. Sauté onions until golden.

    Add ginger-garlic paste and cook 1 minute.

    Add chopped vegetables; sauté 5 minutes until slightly softened.

    Add tomatoes and salt; cook covered 10–15 minutes until vegetables are tender and gravy thickens.

    Garnish with fresh coriander and serve hot with rice or roti.

  • Peas – ½ cup
  • Onion – 1, finely chopped

  • Salt – to taste
  • Fresh coriander – 2 tbsp, chopped
