Vegetable Khichdi

A wholesome one-pot dish of rice, lentils, and mixed vegetables. Lightly spiced and ideal for a comforting meal.

Wash rice and dal; chop vegetables.

Heat oil; sauté cumin seeds, onions, and garlic until golden.

Add vegetables and turmeric; cook 3–4 minutes.

Add rice, dal, water, and salt. Bring to boil then simmer 20–25 minutes until soft.

Garnish with coriander and serve with yogurt or pickle.
