Chicken Dopiaza

A classic dopiaza — double-onion chicken with a sweet-savoury, deeply caramelized gravy.

Fry 3 sliced onions very slowly until deep caramel; set aside 2/3.

Add ginger-garlic paste and 1 chopped onion to pan.

Add chicken, chili powder, and salt; cook 15 minutes.

Add tomato and reserved onions; simmer 20 minutes. Garnish and serve.
