Egg Curry

Hard-boiled eggs cooked in a spiced tomato-onion gravy. Rich, flavorful, and easy to make, ideal for lunch or dinner.

Instructions

    Boil and peel eggs; set aside.

    Heat oil in a pan. Sauté onions and garlic until golden.

    Add tomatoes, green chili, red chili powder, and salt. Cook 5–7 minutes until tomatoes soften.

    Add eggs and gently stir to coat with gravy. Simmer 5 minutes.

    Garnish with coriander and serve hot with rice or roti.
